| Roasted Potato Salad Recipe

1 1/2 lbs small red potatoes halved 1/4 cup unsalted butter very soft3 cloves minced garlic 2 teaspoons cracked black pepper
3-4 sprigs rosemary separated from stem 1/4 teaspoon salt
Place all ingredients in roasting pan covered in preheated 400 degree oven.
Bake 15 minutes, uncover & bake another 15 minutes, stirring occasionally until slightly golden.
2 teaspoons Dijon mustard
1 egg yolk
1/4 teaspoon salt 1/4 cup each red, green, yellow peppers,
1/4 teaspoon cracked blk pepper minced
Pinch of cayenne
1/3 cup Rice Bran Oil
2 tablespoons rice vinegar 1/3 cup crispy crumbled turkey bacon 1/4 cup red onion, diced 1/4 cup scallions thin sliced
Meanwhile In a small bowl whisk together mustard, egg yolk & seasonings. Add the oil slowly alternating with the vinegar, to make a mayonnaise.While potatoes are still warm, quarter & combine with remaining ingredients in a large bowl. Toss with dressing.
