Red, yellow, and orange bell peppers are an excellent source of vitamin C, fiber, and phytonutrients. I have read reports where colored peppers are a larger source of vitamin C than citrus. Peppers are also an excellent source of sulfur, which is critical in liver detoxification. Usually I slice my peppers and add them to my salad, or use them in my SWAP bag. For dinner, you can stuff peppers with organic chicken and/or ground turkey. Of note, green peppers tend to create digestive distress in those who have liver compromise.
