Orange-fleshed sweet potatoes may be one of nature’s unsurpassed sources of beta-carotene, a vitamin A precursor. It’s important to have some fat in your sweet potato-containing meals if you want to enjoy the full beta-carotene benefits of this root vegetable. Adding a healthy fat per meal significantly increases our uptake of beta-carotene from sweet potatoes – usually one tablespoon is all you need; you could also use a tab of butter. I bake my sweet potatoes for thirty minutes. They taste great and also have more nutrients than white potatoes.
