Black Bean Salad


This festive dish is best used with organic ingredients if possible.


1/3 C lime juice

1/2 C olive oil

1/8 tsp cayenne pepper

1 clove garlic, minced

1 tsp Celtic Sea Salt

2 cans black beans

1½ cups frozen corn

1 avocado

1 red bell pepper

1 yellow bell pepper

1 green bell pepper

2 tomatoes

6 green onions

1/2 C fresh cilantro


Place lime juice, oil, garlic, salt, cayenne pepper in a small jar with lid. Mix and set aside.

Chop all vegetables. In a large salad bowl, combine beans, corn, avocado, chopped vegetables and cilantro.

Shake lime dressing and pour over the salad. Stir to coat vegetables and beans with dressing and serve alone or with brown rice wraps.
