Dr. Bob’s Chicken Meatballs

Serving Size: 30 meatballs


3 pounds of ground chicken thighs

1 pound of ground chicken breast

1 to 2 eggs-depending on the moisture desired

Gluten-Free breadcrumbs

Chopped Spinach-To taste

Dr. Bob “Approved’ Additions: Per your preference…To taste

Fresh, ground Parmesan or Romano cheese

Fresh cut basil

Oregano-fresh or dried

Poultry seasoning

Garlic powder

Onion salt

Celtic Sea Salt


Mix all ingredients thoroughly. Shape into approximately 1 1/2″ meatballs. Place on lightly greased basking sheet and bake at 325-350 Fahrenheit for twenty to thirty minutes, maximum.
