Dr. Bob’s Chicken Meatloaf


2 Pounds-Organic ground chicken

1 Cup-Thinly sliced spinach

1 Egg

1/3 Cup-Milled flax or brown rice “bread crumbs”

Dashes Of: Italian Seasoning, Garlic Salt, & Paprika

1/2 Cup-Sautéed red onions

Optional (Based on dietary needs/constraints): Grated, fresh Parmesan cheese


1. In a large bowl, add one pound of the ground chicken

2. Add ¼ teaspoon of garlic salt, Italian herbs and paprika

3. Add a portion of the sliced spinach

4. Add a portion of the sautéed onions

5. Blend the one pound of chicken and ingredients

6. Repeat the process with the second pound as above

7. Preheat the oven to 350 degrees

8. Place the ingredients in a meat loaf pan

9. Cover

10. Bake for 1 hour at 350 degrees

An option would be to add two tablespoons of a barbecue sauce (there are gluten-free, sugar-free options) of your choice.
