Dr. Bob’s Easter Spritz Cookies

Note: Makes approximately three-dozen cookies.


1/2-cup butter

2-tbsp fruit sweet (Wax Orchard’s brand)

2 organic egg yolks

1 1/2-tsp almond extract

Pinch of Celtic Sea Salt

2 cups brown rice flour


Preheat oven to 400 F. Combine butter and fruit sweet. Add in egg yolks, almond extract and salt. Stir in flour to make a stiff dough.

Force through a pastry bag in three-inch lengths. Form into desired shapes and flatten slightly. Bake for ten minutes until lightly browned.
